The Position
Under the sous-chef, you will participate in creating a creative and refined cuisine, where each dish is designed to offer a gastronomic experience up to the highest standards of quality. You will:
- participate in the preparation of dishes;
- prepare, season, and cook meats, vegetables, and other foods to be consumed using appropriate methods;
- create original and refined dishes, highlighting flavors, textures, and colors;
- maintain production, presentation, and service standards;
- serve food to customers;
- participate in inventory management of your sector;
- control operational costs by ensuring proper management of perishable inventory;
- maintain the highest standards of hygiene, cleanliness, and health and safety;
- understand and apply the policies and regulations in effect at the establishment and have a good knowledge of all products and services offered;
- perform any other duties aimed at ensuring smooth operations and high-quality customer service.
Essential Requirements
- Diploma of Vocational Studies (D.E.P.) in culinary arts from a recognized institution. A college-level course in food service management is an asset.
- Minimum of 3 years of relevant experience.
Other Requirements
- Ability to conceive and execute original and refined dishes, harmonizing flavors, textures, colors, and presentation.
- Knowledge of seasonal products, local ingredients, and exceptional ingredients.
- Mastery of culinary techniques, such as lactofermentation, maturation, lyophilization, and texturization.
- Excellent sense of responsibility and organization.
- Customer orientation and pursuit of excellence.
- Ability to adapt to a dynamic environment and manage priorities.
- Positive leadership and collaborative spirit.
- Strict adherence to hygiene, cleanliness, and safety standards.
- Availability to work on various shifts (day, evening, weekends, and holidays).
