Baker - Dough Roller

Bread and Flavors is a growing bakery-cafe group on the South Shore of Montreal. We bet on artisanal products, rigorous production, and constant concern for quality — from fermentation to cooking. Our production facility in Brossard supplies all of our locations.

Your responsibilities

• Perform dough rolling and shaping of layered dough (pastries, croissants, chocolate bread, etc.) according to our quality standards
• Ensure daily production while respecting recipes, fermentation times, and methods
• Control the texture, layering, and cooking of products
• Maintain cleanliness, workstation organization, and compliance with hygiene standards (MAPAQ/CFIA)
• Manage inventory of raw materials related to rolled production
• Collaborate with the production team to meet delivery deadlines to different branches
• Train and mentor, if necessary, baker apprentices

Desired profile

• DEC or DEC in baking-pastry, or significant equivalent experience in dough rolling
• Confirmed experience in artisanal baking, ideally in high-volume production
• Mastery of techniques for raised layered dough (croissant making)
• Attention to detail, rigor, and speed of execution
• Ability to work early in the morning and under pressure during peak demand periods
• Team spirit and autonomy
